Ingredients 2 Tbsp buter 5 slices white toast bread 1/3 cup raisins 4 eggs 1 1/4 cups whole milk 3/4 cup cream 1/3 cup vinilla extract 1/4 apicot preserves 2 tsb lemon juice | How it's made Butter a 20cm baking dish. Sprinkle raisins on the bottom of the baking dish. Butter one side of each bread slice. Cut them twice diagonally and place the bread slices butter side down overlaying each other a bit. Beat together the eggs, milk, cream, sugar and vanilla. Pour over the bread and let stand for at least 30 min. Preheat oven to 180oC. Bake 30 min. until the center is set. Meanwhile, bring the preserves, lemon juice and 1 Tbsp of water to a boil, stir. Brush the mixture over the top of the pudding. Let stand 5 min. then serve hot. |
